Zesty Macadamia Nut Pie Crust

This recipe comes from Rhonda's monthly Culinary Class. It's a delicious pie crust that's perfect for pudding fillings, such as Rhonda's Key Lime Pudding.


  • ¾ cups macadamia nuts (soaked 6 hours and drained)
  • ¾ cups walnuts
  • ¾ cups pecans
  • ½ cup Medjool dates (pitted)
  • ¼ cup coconut butter
  • 1 teaspoon lime zest
  • ½ teaspoon Celtic Sea or Himalayan Salt
  • ¼ cup finely shredded unsweetened coconut


Process all ingredients except for coconut in a food processor with the “S” blade until a moist consistency. Place coconut in the bottom of a spring form pan. Chill crust while making your filling.
