Raw Pecan Pesto

Here's another tasty recipe from Susan and Victoria new book The Live Food Factor:

Ingredients

  • 2 cups raw pecans (soak 4-8 hours, rinse and drain)
  • 1 bunch cilantro
  • 1 medium sweet red onion
  • 4 cloves of garlic
  • Juice of 1 small lemon or lime
  • Ginger to taste

Directions

  1. Place all ingredients in a food processor, and using an 'S' blade, process until smooth.
  2. Excellent over raw zucchini noodles. ENJOY
