Raw Pecan Pesto

Here's another tasty recipe from Susan and Victoria new book The Live Food Factor:
Ingredients
- 2 cups raw pecans (soak 4-8 hours, rinse and drain)
- 1 bunch cilantro
- 1 medium sweet red onion
- 4 cloves of garlic
- Juice of 1 small lemon or lime
- Ginger to taste
Directions
- Place all ingredients in a food processor, and using an 'S' blade, process until smooth.
- Excellent over raw zucchini noodles. ENJOY
