Raw Non-Dairy Whipped Cream

Rhonda used this recipe to top a key-lime pie she demonstrated in her Friday night Culinary Class. It can be used for topping most anywhere a whipping cream would be desired and is especially good on fresh fruit.
Ingredients
- 1 cup pine nuts OR macadamia nuts (soaked overnight and drained)
- 1 golden delicious apple (peeled and seeded)
- ¼ cup agave nectar
- ¼ vanilla bean (ground) OR 1 teaspoon pure vanilla
- 1 cup distilled water
Directions
Place all ingredients but the water in a Vita Mix or other powerful blender. Turn on the blender and slowly add water. Less water makes a thicker dressing so add the water slowly until desired consistency is reached. Enjoy!
