Raw Cranberry Sauce

The best cranberry sauce you will ever make!

Ingredients

  • 2 cups fresh cranberries, ground*
  • 1 orange (washed to remove any residues) chop very fine including at least ½ of the rind
  • 2 ripe pears, peeled, and chopped fine
  • 1 medium apple, peeled, and chopped fine
  • ½ cup walnuts or pecans, chopped into pieces
  • 4 celery ribs (stalks), chopped fine
  • ½ cup organic raisins or dates (pit and chop dates, if using)
  • 1 tsp cinnamon or pumpkin pie spice
  • ¼ tsp ginger
  • ¼ tsp allspice
  • ½ cup raw, unfiltered honey or other sweetener**

Directions

  1. Grind berries, chop fruit, mince nuts, chop celery and dates if using.
  2. Place all ingredients in a bowl and mix well.
  3. Cover and place in the refrigerator until ready to serve.
  4. Serve on a bed of leaf lettuce.
 
*Option: Leave cranberries whole and place in a saucepan with all remaining ingredients. Turn burner to low and simmer until thickened, stirring occasionally.
 
** Option: Replace 1/2 cup honey or other sweetener with 1/2 cup soakd, pitted, and pureed dates.
