Marilyn's Strawberry/Spinach Salad
This recipe comes from Hallelujah! Simple Weekly Meal Plans - Volume 1. This salad is so easy to make and is often referred to as a favorite!
Plus - it can even improve your mood! Strawberries stimulate the release of serotonin, which helps to lift your mood and promote relaxation!
Ingredients
Salad
- 1 package organic baby spinach (5 ounce)
- 1 pint organic strawberries (hulled)
- 1 small sweet purple onion (thinly sliced)
- 2 Tbsp sesame seeds (lightly toasted)
Dressing
- 3/4 cup Vegenaise (purple label)
- 1/4 cup sweetener (raw honey, or agave nectar, or maple syrup)
- 1 Tbsp lemon juice (freshly squeezed)
- 2 Tbsp almond or rice milk
Directions
- Toss all the salad ingredients together in a large bowl or on a large platter.
- Mix dressing and serve on the side.
