Kasha and Cabbage Soup

Ingredients

  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 stalks celery, chopped
  • 1/2 head cabbage, chopped
  • 8 oz can tomato sauce
  • 1/2 cup parsley, chopped (or 2 Tbsp dried)
  • pinch cayenne
  • 3/4 cup kasha (buckwheat groats)
  • 6 cups water
  • 2 bay leaves
  • 1/2 tsp unrefined sea salt
  • 1 tsp fresh mint
  • juice of one lemon (1/4 cup)
  • (optional) 2 tsp balsamic vinegar

 

Directions

  1. Sauté onion and garlic in oil.
  2. Put onion, garlic, and all other ingredients in a large pot.
  3. Bring to a boil, then cover and simmer for 45 minutes.
