Kasha and Cabbage Soup

Ingredients
- 2 Tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 stalks celery, chopped
- 1/2 head cabbage, chopped
- 8 oz can tomato sauce
- 1/2 cup parsley, chopped (or 2 Tbsp dried)
- pinch cayenne
- 3/4 cup kasha (buckwheat groats)
- 6 cups water
- 2 bay leaves
- 1/2 tsp unrefined sea salt
- 1 tsp fresh mint
- juice of one lemon (1/4 cup)
- (optional) 2 tsp balsamic vinegar
Directions
- Sauté onion and garlic in oil.
- Put onion, garlic, and all other ingredients in a large pot.
- Bring to a boil, then cover and simmer for 45 minutes.
