Jims Five-Bean Salad
Creating a very fast a Jims Five Bean Salad.
Ingredients
- 1 15 oz. can Black Beans
- 1 15 oz. can Kidney Beans
- 1 15 oz. can Pinto Beans
- 1 15 oz. can Garbanzo Beans
- 1 pkg. Frozen Lima Beans
- 1/2 cup Sweet Onion
- 1 Red Bell Pepper
- 1/2 cup Extra Virgin Olive Oil
- 1/2 cup Organic Apple Cider Vinegar
- 1 handful Cilantro (chopped)
- Stevia to taste as a sweetener
Directions
- Rinse, drain, and combine all beans in a large Tupperware type container with tight fitting lid.
- In a food processor, with the 'S' blade, pulse onion, pepper and cilantro to desired consistency.
- Add to beans.
- Add oil, vinegar and Stevia to desired sweetness and mix well.
- It is now ready to serve, or cover and refrigerate till ready to serve.
- Best if eaten within three days.
- (A can of rinsed, drained corn may be added to the recipe for more color and taste.) ENJOY!
