Holiday Sweet Potato Souffle

Here is another recipe from Rhonda's book "Hallelujah Holiday Recipes." You will find the recipe on page 140:
Ingredients
- 3-4 medium Sweet Potatoes (peeled and cut into chunks)
- 1 Orange (juiced)
- 2-3 tablespoons Raw Unfiltered Honey (or to taste)
- ¼ cup Almond Milk or Rice Milk
- 2-3 tablespoons Pure Maple Syrup (or Honey)
Directions
- Boil Sweet Potatoes until soft.
- Mash them and add Orange Juice, Honey, and Milk.
- Mix thoroughly and place in a liquid lecithin sprayed casserole dish.
- Drizzle Maple Syrup over the top and bake for about 30 minutes at 350 degrees or until heated through.
- (Optional: Sprinkle with chopped Pecans before serving.) ENJOY!
