Holiday Sweet Potato Souffle

Here is another recipe from Rhonda's book "Hallelujah Holiday Recipes." You will find the recipe on page 140:

Ingredients

  • 3-4 medium Sweet Potatoes (peeled and cut into chunks)
  • 1 Orange (juiced)
  • 2-3 tablespoons Raw Unfiltered Honey (or to taste)
  • ¼ cup Almond Milk or Rice Milk
  • 2-3 tablespoons Pure Maple Syrup (or Honey)

Directions

  1. Boil Sweet Potatoes until soft.
  2. Mash them and add Orange Juice, Honey, and Milk.
  3. Mix thoroughly and place in a liquid lecithin sprayed casserole dish.
  4. Drizzle Maple Syrup over the top and bake for about 30 minutes at 350 degrees or until heated through.
  5. (Optional: Sprinkle with chopped Pecans before serving.) ENJOY!
