Holiday Egg Nog

The following recipe is found on page 31 of Hallelujah Holiday Recipes by Rhonda.

Ingredients

  • 1 Quart Almond Milk (Recipe below)
  • 1/2 teaspoon ground Cardamon
  • 1/2 teaspoon ground Cinnamon
  • 1/2 teaspoon ground Fennel
  • 1/2 teaspoon ground Cloves
  • 1/2 teaspoons ground Nutmeg
  • 1/2 cup Raw Almonds soaked overnight and drained
  • 2-3 Medjool Dates (pitted, soaked overnight in 2 cups distilled water.)
  • 1/4 cup unsweetened Coconut
  • 3/4 teaspoon pure Vanilla 1/2 teaspoon Cinnamon (Optional, and don't add if using above recipe)

Directions

  1. The following morning, place almonds along with dates and their soaking water, and unsweetened coconut in a Vita-Mix or blender and process until creamy.
  2. If you do not have a Vita-Mix, it will be necessary to strain the milk, in a fine strainer or cheesecloth.
  3. Will keep several days refrigerated.
  4. Add spices to almond milk, blend well, refrigerate and serve. ENJOY
