Holiday Egg Nog

The following recipe is found on page 31 of Hallelujah Holiday Recipes by Rhonda.
Ingredients
- 1 Quart Almond Milk (Recipe below)
- 1/2 teaspoon ground Cardamon
- 1/2 teaspoon ground Cinnamon
- 1/2 teaspoon ground Fennel
- 1/2 teaspoon ground Cloves
- 1/2 teaspoons ground Nutmeg
- 1/2 cup Raw Almonds soaked overnight and drained
- 2-3 Medjool Dates (pitted, soaked overnight in 2 cups distilled water.)
- 1/4 cup unsweetened Coconut
- 3/4 teaspoon pure Vanilla 1/2 teaspoon Cinnamon (Optional, and don't add if using above recipe)
Directions
- The following morning, place almonds along with dates and their soaking water, and unsweetened coconut in a Vita-Mix or blender and process until creamy.
- If you do not have a Vita-Mix, it will be necessary to strain the milk, in a fine strainer or cheesecloth.
- Will keep several days refrigerated.
- Add spices to almond milk, blend well, refrigerate and serve. ENJOY
