Fantastic Raw Pecan-Almond Treats

Here's a delicious, nutritious and easy to make recipe straight from Rhonda's monthly Culinary Class.
Ingredients
- 1 ½ cups raw pecans (soaked 4 hours and drained well)
- 1 ½ cups raw almonds (soaked 4 hours and drained well)
- 2 cups Medjool dates (pitted)
- ½ vanilla bean OR 2 teaspoons vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
- Pinch of clove powder
- Pinch of Celtic Sea Salt
- 2 tablespoon flaxseeds (ground)
- ½ cup coconut flakes
Directions
Place all ingredients except ground flax seed and coconut flakes in food processor with S blade and process until well mixed. Mixture will be thick. Transfer mixture to a bowl and add flax seed, mixing in well with hands. Roll into balls and then roll in coconut flakes to coat. Refrigerate. ENJOY
