Easy Veggie Stew

You can substitute with a mixture of almost any veggies you have in your refrigerator.

Ingredients

  • 1 large onion cut into chunks
  • 4-5 carrots peeled and cut into chunks
  • 6 or more potatoes peeled and cut into chunks
  • 1 cup of frozen or fresh peas
  • 3-4 stalks of celery cut into chunks
  • seasoning to taste with herbs or Celtic sea salt and bay leaf
  • optional: add any other favorite veggies (corn, cabbage, zucchini, etc.)

Directions

Place everything in a crock pot and cover with water, put setting on low, and leave it until you get home. Makes a great meal!
